Distilling Course Description

This course starts by outlining the three distinct stages of distilled spirits production (production of a fermented extract, distillation and downstream modifications), using whiskey, gin, tequila and brandy as examples. 

The workshop is online and live starting at 8:00 am.

So, rather than leaving your friends and family to travel to Corvallis, OR, you will be able to attend live where ever you happen to be! Just like a traditional in-person event, you will be able to ask questions and interact directly with your instructor Paul Hughes.

Distilled Business Plan

A wide range of business plans and successful distilling models are available to a new distiller, from third-party manufacturing to complete production of fermented alcohol and distillation.

Learn TTB and Distilling Permits

The course finishes with a step-by-step discussion of the licensing requirements, both federal (TTB) and state (Oregon, OLCC). As part of the course manual, a paper explaining these licensing requirements is included. 

Distilled Spirits Training Overview

This online course is designed to provide you with the various options and information needed to start your own distillery. After two days, you will:

Paul Hughes, MBA, PhD

After gaining his PhD in chemistry from the University of London, Paul moved into the brewing research sector in 1990. After spells as an industry-sponsored research scientist and then principal scientist with Heineken International, Paul moved to Heriot-Watt University in 2005 as Professor of Brewing and Distilling and director of the International Centre for Brewing and Distilling. Paul moved to Oregon in 2015 and helped establish his popular Distillery Startup Workshop program and has been a featured author for publications like The Whiskey Wash and other distilling publications.
