Module 4 Course Overview

This module explores the foundations of food safety. This includes understanding what hazards are, where they come from, why and how microbial hazards survive, and how we can prevent and control hazards. This is Module 1 of the two-part series on food safety.

Learning Outcomes

After successful completion of this module, you will know:

  • The hazards that can be present in food products and processes
  • To identify sources of contamination and how contamination events occur
  • The properties of microorganisms that allow them to grow and survive in the food processing environment
  • To be able to determine potential strategies to prevent and control hazards

Instructors

Dr. Jovana Kovacevic

Dr. Jovana Kovacevic, Associate Professor in Oregon State University Food Science and Technology.

Dr. Kovacevic's program focuses on food microbiology and safety, with emphasis on traditional and novel molecular microbiology and genomic approaches to study the mechanisms underlying pathogenesis, stress survival, persistence and antimicrobial resistance of foodborne pathogens. Extension activities involve FSMA training, education and outreach through the Western Regional Center to Enhance Food Safety, and food safety training and client service support through the Food Innovation Center.
