Quality & Food Safety: Module 4 - Food Processing Systems & Specifications | OSU Continuing Education

When specs are unclear or systems are not aligned, quality issues become “mysteries,” teams rely on tribal knowledge, and corrective actions do not stick.

This module helps you strengthen the systems behind consistent quality and food safety so you can reduce variation, respond faster, and support continuous improvement that lasts.

Course Overview

This module introduces the meaning and importance of systems and specifications in food processing.

You will learn how food systems work, what their key components are, and how drivers and feedback mechanisms influence outcomes.

You will also review a typical manufacturing model and its control systems, then connect that framework to process components and system elements used in continuous improvement.

Finally, you will examine corrective and preventive actions (CAPA) and the role company culture plays in whether systems actually work in practice.

Learning Outcomes

By the end of this module, you will be able to:

  • Identify specifications and explain why they matter in food processing.
  • Describe food systems, their components, and how drivers and feedback mechanisms influence performance.
  • Describe a typical manufacturing model and the controls used to manage it.
  • Explain key process components and system elements that support consistent outcomes.
  • Identify the building blocks of continuous improvement in food operations.
  • Explain CAPA concepts in the food industry and how they support prevention, not just correction.
  • Describe why food safety culture is essential for effective systems and specifications.

Who Should Take This Course

You manage or support quality systems and want fewer recurring issues.

You work in processing operations, QA, or continuous improvement. You need a stronger systems view that connects specs, controls, CAPA, and culture.
